There is so much more available than there ever was before for us gluten-free beauties, isn't there!?! "Gluten Free" is something we see a lot more of - from restaurants to grocery stores and even available at Costco. It's amazing!<br />
<br />
Sometimes, its the simple things that we miss - like a hot bowl of cream of tomato soup on a cold, damp winter day. We had a lot of days like that this winter. Now, thanks to this marvelous new invention called the Internet (who knew) I stumbled upon a few recipes for how to make cream of tomato soup gluten free with only four simple ingredients. I tried a few - and here's the winning combo!<br />
<br />
1 5oz tin of tomato paste<br />
3 cups of milk (I use 1%)<br />
1 tbsp. sugar<br />
1 tsp salt<br />
<br />
Wisk until smooth, heat, enjoy!<br />
<br />
It's pretty much bang-on, folks. Maybe a little thinner than the original (no glutinous thickeners added) but the taste is exactly the same.<br />
<br />
For me - Glutino's table crackers are an excellent in-soup substitute for the saltine crackers I grew up with.<br />

So I need to send a shout-out to some of there amazing places!!! Gluten free is widely known here... very easy to order, separate gluten free menus, and very knowledgeable staff... it was a very welcome change from home where in most places you still need to ask 20 questions before you dare lift your fork to your mouth.<br />

The first place we went was to The Empress Hotel in downtown Victoria for afternoon tea. Not only was the the food amazing but it was a true experience in dining! Everything was at the height of British elegance. The gluten free finger sandwiches, scones and desserts were fantastic!<br />
<br />
Also downtown we enjoyed fantastic gluten free pizza at The Joint Pizzeria. Excellent rice crust, lots of creative and traditional options! Highly recommend!<br />
<br />
Big thanks to Purdy's chocolates for having top quality chocolate most of which is gluten free! I am bringing home lots of that as gifts to share with friends and family!<br />

I was beyond excited to have my first hamburger, fries, milkshake and hot dog in three years.... in amazing buns! Big Wheel Burger on Cook Street was incredible!!! Fresh ground beef cooked to perfection.... mouth watering just thinking about it! If you are heading into Victoria this place is a MUST! The hamburger and hot dog buns were supplied by Origins Gluten Free Bakery close by. Their bread is phenominal and the vegan chocolate cupcakes and chocolate eclaires were to die for. Even the grocery stores are well stocked with gluten free items - especially the Market on Millstream!<br />
<br />
So if you are planning a vacation and need to eat gluten free - Victoria BC has it all - beautiful scenery, beautiful weather, beautiful people and amazing food! </tbody></table>In a large saucepan, cook the beef until no longer pink, drain the fat. Add green pepper and onion and saute until onion is clear. Add blended tomatoes and canned spaghetti sauce. Stir until well blended.<br />

Add all the spices and stir until well blended.<br />

Simmer for 1-1/2 hours <br />

Use with gluten free brown rice spaghetti noodles.<br />

You can also freeze any portions you prefer for future use.<br />

So - what and where am I eating while my favorite cooking tools are boxed away and my kitchen is cluttered?<br />
<br />
To be honest, here's how I am eating on the fly:<br />
<br />
Swiss Chalet - quarter chicken with steamed veggies<br />
Wendy's - Baja Salad<br />
Smitty's (a pancake house in town that has a great new gluten free menu)<br />
Mom's - always something good cookin' there, and when she knows I am coming she takes extra care to make me something sans gluten (tonight was pork, baked potato and steamed veggies - YUM!)<br />
<br />
At home, I am keeping it simple with eggs, tuna salad, pancakes made with El Peto pancake mix, GF cereal with banana, yogurt, fruit smoothies, and Glutino oreo-like cookies. Hey - its only short-term right? So, fast and easy and won't make me sick - and its all good!<br />
<br />
For Easter - just sending the word out to be careful when it comes to ham and turkey which are sometimes injected with broths that contain gluten, so best to call the manufacturer if you aren't getting them from a butcher or store that knows for sure what's up. <br />
<br />
And of course, I need to share a recipe.<br />

STUFFING<br />
(again, keeping it simple - and seems appropriate that I am sharing a gluten -free stuffing recipe while I am stuffing boxes...)<br />

Donairs.... spiced meet in a sweet sauce wrapped in warm pita bread. Could anything be better? I think not!! Especially when you top them with veggies and cheese. YUM! Depending on where you are from you might know them as Gyros.<br />

Growing up in the Maritimes, ordering donairs was a regular thing with pizza, or on their own. Donairs are pretty popular here - you can even get Pizza Donairs and Donair Egg rolls...and I can't eat any of them!! (insert sad face here). Its not just because of the pita bread... there is gluten in the meat in the form of bread crumbs.<br />

Good thing for me, my good friend once again had the answer in the form of a recipe for home made donair meat and sauce that easily converted to gluten free!<br />
<br />
<strong>Donair Meat</strong><br />

1/2 tsp black pepper<br />
2 tsp garlic powder<br />
1 1/2 tsp red pepper<br />
2 tsp kosher salt<br />
2 tsp onion powder<br />
2 tsp paprika<br />
1 tsp summer savory<br />
1 1/2 tsp oregano<br />
1 cup fine bread crumbs (I crumbled up day old gluten free bread)<br />

Mix the spices together in a separate bowl, then add to the meat to ensure an even distribution of the flavours. Knead together meat, crumbs and seasoning until well mixed. I used the paddle and my stand mixer. Use potato masher to press into loaf pan. bake 300 for 1 1/2 hours- 2 hours<br />
<br />
<strong>Donair Sauce</strong><br />
<br />
1 can sweetened condensed milk<br />
just a shade less then 1/2 cup of vinegar<br />
3 tbsp milk<br />
1 tsp garlic powder <br />
<br />
Whisk together well. Refrigerate any left overs.<br />

Remove from skillet.<br />
Smear warmed pita with sauce.<br />
Top with crisped Donair meat.<br />
Top with diced onions and tomatoes.<br />
Top with more sauce.<br />
Wrap in tin foil and enjoy!<br />

We are getting ready to move to a new place in a few weeks, so in a kitchen filled with boxes, I took a notion tonight to make my own butter. I would gladly show you a picture of the finished product, but somewhere in this mess of an apartment, hides my camera. <br />
<br />
Not that it matters, that since I went to put the dish that held my beautiful new ball of butter into the fridge, I dropped it and the dish smashed... all I could do is laugh my fool head off. Hence my current feelings of lunacy.<br />
<br />
Now, I have to say that the butter was an AMAZING success. I had never even thought of making butter at home until one of my dear friends told me that she was having a great time making her own butter with her kids. I was amazed...I had it in my head it was an ancient churning process or something that required fresh from-the-farm milk/cream.<br />
<br />
She enlightened me that it is actually quite easy. So - here is how it works.<br />
<br />
In your stand mixer put <strong>2 cups of heavy cream</strong> into the bowl (I used whipping cream). Room temperature is best. You can do it with cold cream but it takes a lot longer. Use the whisk attachment and make sure you use your splash guard!! Add <strong>1/2 tsp of salt.</strong><br />
<br />
On your highest speed, whip the cream until it "cracks". By "crack" I don't mean an audible sound, I mean a separation that occurs where you see chunks of butter and liquid. This will take about 3-4 minutes if the cream is room temperature, or about closer to 10 minutes if it's cold.<br />
<br />
When this happens, stop the mixer and using a rubber spatula push all of the chunks of butter together to one side, separating it from the liquid (which is buttermilk - you can pour this off into a container and use it for baking later!). Remove the liquid and keep the butter in the bowl. I actually "strained" the butter out of the buttermilk using a wire strainer and a clean bowl and pressed the butter to try and remove as much of the buttermilk as I could.<br />
<br />
Change your whisk out for your K paddle and add about 1 cup of ice cold water to the bowl with the butter. Mix. Again, using your spatula push the butter off to one side, drain off the liquid (this time, discard the liquid). Repeat this process until the water comes off clear. This is important to the process because you need to remove all of the buttermilk from the butter so that it will stay - it goes rancid pretty quick if you don't get it out.<br />
<br />
Once you have drained off the last of the water, form the butter into a ball - and ENJOY!!! <br />

Before I broke my dish full of butter, I managed to make some popcorn on the stove top and cover it with freshly made butter! 1/2 cup brown rice flour<br />
1/2 cup corn starch<br />
1-1/2 tsp baking powder<br />

Add cold butter. Blend using medium speed on handheld and stand mixers, until butter is cut into the dough and no large pieces of butter remain. When correctly mixed, dry ingredients should resemble lumpy sand, some pea-sized pieces of butter will remain. I have a good friend who makes amazing Hawaiian meatballs when she throws a party. She gave me the recipe for the sauce 5 years ago and I have been using it on pork and chicken ever since. It is sweet and zesty and it adapted very well to gluten-free!<br />
<br />
In the oven prepare 3 large boneless, skinless chicken breasts (or 4 small) until fully cooked through. Chop.<br />
<br />
In a saucepan combine:<br />
<br />
1 14 oz can of Dole crushed pineapple (ingredients should be just pineapple and pineapple juice)<br />
1/2 cup white vinegar<br />
1/2 cup packed light brown sugar<br />
1/2 cup Heinz Ketchup<br />
1/4 cup gluten free soya sauce<br />
<br />
Bring to a boil and add 1 tbsp of potato starch and stir to thicken.<br />
<br />
Allow to simmer on medium heat for about 5 minutes, stirring often. Transfer to slow cooker and add chopped chicken. Allow to cook for 2 hours on low in the slow cooker, stirring occasionally.<br />
<br />
Serve over rice or gluten free noodles (shown is a mixture of basmatti rice, wild rice and quinoa).<br />

The ones shown are made by my Mom. They are currently in the freezer, ready to go to work for easy breakfasts and snacks (the stomach flu has kept me from enjoying them right away).</span><br />

I stumbled upon this Carrot Cake Recipe on the Betty Crocker website that called out for the gluten free Yellow Cake Mix. </span><br />

<span style="font-family: Arial Unicode MS;">My boyfriend's parents live about 2 hours out of town, and we were going to visit for the weekend. Bringing a gluten free dessert with us sounded like a good excuse to try it out! So, the night before we left, I set to work. </span><br />

<span style="font-family: Arial Unicode MS;">I followed the recipe, and at the advice of fellow bakers who had commented on the Betty Crocker website, I added 1/4 cup of crushed pineapple to ensure it came out nice and moist. It took longer than suggested to bake (perhaps due to the pineapple), but when it came out of the oven it looked and smelled like Carrot Cake! I was hopeful! </span><br />

<span style="font-family: Arial Unicode MS;">We took it with us, and his father proclaimed on the first bite "It tastes like Carrot Cake!" - music to my ears! I tried it and it did taste just like Carrot Cake! The texture was moist and fluffy! I challenge anyone to tell the difference between it and one full of gluten!</span><br />

I love pizza. Pizza is everywhere in our world, so after years of having it as part of my diet, it was one of the harder things to give up. <br />

Top it with gluten free meats (I recently found gluten free deli meats locally!! I can find Buddig meats at the Bayers Lake and Braemar Superstores in HRM). Pancakes were always a weekend treat, especially when my Nanny would come over and make them. Mix in stand mixer or with hand mixer until well blended. The mixture will be thick.<br />

It was savory, filling and would warm you from head to toe. After my diagnosis, of course I could no longer enjoy this soup and after a whole winter without it, he suggested that I could figure out how to make it myself. <span style="font-family: Arial;">So... off to Google I went in search of my favorite restaurant's soup recipe. I combined my findings from a few to make what I felt was in the soup and ~ Voila! He declared that it was better than the restaurant soup (which may have been kind, but I think it was at least as good as the restaurant's soup) and we have been enjoying it ever since.</span><br />

<span style="font-family: Arial;">There is some work to this soup, with removing the skins and seeds from the tomatoes, but if you love a hearty tomato-based soup, this one will not disappoint (and it makes a huge batch, so you can freeze a bunch for another time)!</span><br />

<span style="font-family: Arial; mso-fareast-font-family: 'Times New Roman';">In a separate pot, boil water and drop the whole tomatoes (pitted) into the boiling water.<span style="mso-spacerun: yes;"> </span>Wait a few minutes (until you see the skins starting to split) then remove the tomatoes and plunge into very cold water. The skins will peel off very easily, right in your hand!.<span style="mso-spacerun: yes;"> </span>Chop tomatoes and remove the seeds.<span style="mso-spacerun: yes;"> </span>Add the tomatoes to the softened veggies in the other pot and let simmer for 10 minutes with salt and thyme.<span style="mso-spacerun: yes;"> </span></span><span style="font-family: Arial;"></span><br />

<span style="font-family: Arial Unicode MS;">Strangely enough, the origins of this recipe are from a 35-year old "Five Roses Flour" cookbook of my mothers. I was over visiting Mom one afternoon over the holidays, and there it was sitting on my mother’s countertop. I was idly flipping through the book when I stumbled across a recipe for Lemon Pie filling. I had never known any other way of making a lemon pie filling other than a Shariff mix, so I was curious what went into it. </span><br />

<span style="font-family: Arial Unicode MS;">I tried it - first with trying to make a gluten-free all-purpose flour and used the full 10tbsp that it called for... that was horrible mistake! It came out like bread dough. The second go at it, I just used a few tablespoons of potato starch until it reached the desired thickness and doubled the amount of lemon juice the recipe called for and it came out beautifully!</span><br />

Slowly add the potato starch, stirring constantly until reaching the desired thichness. Cook until thickened, stirring constantly. Cover and continue to cook for 20 minutes longer without stirring. Beat egg yolks slightly, add a little of hot mixture. Mix well and return to mixture. Remove from heat. Add lemon juice and margarine.</span><br />
