I have been diagnosed with Celiac Disease for 5 years now. In the beginning had a really hard time finding recipes that tasted like "normal food" and were gluten free. With a lot of trial and error and a lot of help from friends and family I started to figure out how to eat what I wanted gluten free. I want to share what I have learned and by doing so, hopefully will help a few people along the way!

Banana Bread
The smell of Banana Bread baking smells like... home. I hope you enjoy this as much as I do!
1 cup of mashed ripe bananas (about 2 medium)
1 cup of milk
1 egg
1 tsp vanilla
1 cup brown rice flour
1/2 cup potato starch
1 cup sugar
1 tsp xanthan gum
1/2 tsp salt
1 tbsp flax meal
1/2 tsp baking powder
Combine and mix on low speed for about 2 minutes.
Grease a bread pan and scoop the mixture into the pan. Combine 2tbsp and 1/2 tsp of cinnamon in a separate bowl, and then sprinkle on top of the bread mixture. Bake at 350F for 1 hour. Allow to cool, slice and enjoy!
