Cake so good I had it for breakfast!

My good friend's mother-in-law gave me this recipe and I could not wait to try it!  If you like Angel food cake, this one is for you!  It's light, fluffy and has a soft citrus flavor.  The topping recipe that she gave me to go with it goes PERFECTLY! 
Oh - and did I mention, it's Gluten-Free :)



Orange Angel Food Cake

In one bowl, beat together 4 egg whites and 1/4 teaspoon of cream of tartar until firm peaks form.  Save the egg yolks in a seperate bowl.

In another bowl combine:
3/4 cup white sugar
3/4 cup corn starch
2 tsp baking powder
1/8 tsp salt

Once dry ingredients are well combined, make a well in the center of the bowl and add:
1/3 cup orange juice
4 egg yolks 
1/4 cup oil

Mix well until the dry and wet ingredients in the second bowl are well combined.  Carefully add the batter to the egg white mixture.  Bake in an ungreased angelfood cake pan at 350F for 45 minutes.

After the cake has cooled....

Topping
1/2 large tub of whipped topping (cool whip or store equivilant)
1/2 package of Jell-o Light Vanilla Pudding mix
1 snack-sized cup of mandarin oranges in light syrup - syrup drained off.
Mix well in stand mixer until well blended.

Top, serve & enjoy!
Store in the fridge.
