There is so much more available than there ever was before for us gluten-free beauties, isn't there!?! "Gluten Free" is something we see a lot more of - from restaurants to grocery stores and even available at Costco. It's amazing!
Sometimes, its the simple things that we miss - like a hot bowl of cream of tomato soup on a cold, damp winter day. We had a lot of days like that this winter. Now, thanks to this marvelous new invention called the Internet (who knew) I stumbled upon a few recipes for how to make cream of tomato soup gluten free with only four simple ingredients. I tried a few - and here's the winning combo!
1 5oz tin of tomato paste
3 cups of milk (I use 1%)
1 tbsp. sugar
1 tsp salt
Wisk until smooth, heat, enjoy!
It's pretty much bang-on, folks. Maybe a little thinner than the original (no glutinous thickeners added) but the taste is exactly the same.
For me - Glutino's table crackers are an excellent in-soup substitute for the saltine crackers I grew up with.
