Unfried Chicken - Gluten Free

I love watching Dr. Oz.  I DVR it all the time.  On one of his episodes, he featured how to make certain recipes healthier.  Here is the link to one of his recipes that I adapted a little bit to be gluten free.  http://www.doctoroz.com/videos/deen-bros-lighter-fried-chicken

Here is my version!



Unfried Chicken
3-4 uncooked chicken breasts cut into strips

In a bowl combine:
1/4 cup mayonaise
2 tbsp lemon juice
1 egg white
1/4 tsp salt
1/2 tsp onion powder
1/8 tsp black pepper
1/4 tsp garlic powder
1/4 tsp paprika
Mayo mixture

In a freezer bag:
Crush 2 cups of gluten free corn flakes.
Add 1/3 cup of flax meal
Shake to combine, then pour into a pie plate.

Coat each piece of chicken and coat it in the mayonaise mixture, then coat in the corn flake crumb mixture.

Place the coated chicken strips on a wire rack placed on a cookie sheet. 

Bake at 375F for 30 minutes.

Enjoy with plum sauce!
