Unfried Chicken - Gluten Free

I love watching Dr. Oz.  I DVR it all the time.  On one of his episodes, he featured how to make certain recipes healthier.  Here is the link to one of his recipes that I adapted a little bit to be gluten free.

Here is my version!

Unfried Chicken
3-4 uncooked chicken breasts cut into strips

In a bowl combine:
1/4 cup mayonaise
2 tbsp lemon juice
1 egg white
1/4 tsp salt
1/2 tsp onion powder
1/8 tsp black pepper
1/4 tsp garlic powder
1/4 tsp paprika
Mayo mixture

In a freezer bag:
Crush 2 cups of gluten free corn flakes.
Add 1/3 cup of flax meal
Shake to combine, then pour into a pie plate.

Coat each piece of chicken and coat it in the mayonaise mixture, then coat in the corn flake crumb mixture.

Place the coated chicken strips on a wire rack placed on a cookie sheet.

Bake at 375F for 30 minutes.

Enjoy with plum sauce!

This dish sounds very good and easy to put together. I'll let you know how it turns out. Gluten Amelia
